EV stands for effort values. They're different from IVs (independent values) because they're not set in stone and can be changed. So, what's the deal with EVs? Well, every Pokémon can have a maximum of 510 EVs, which are divided into 6 groups: Attack, Special Attack, Defense, Special Defense, Speed, and Hit Points (HP). You can allocate a maximum of 252 EVs to a single group. For every 4 EV points you allocate, your Pokémon gains one additional stat point. For example, if your Pokémon has 8 EVs in Attack, they'll have an extra 2 Attack points.
